What to do with a huge Mortgage Lifter tomato?
My husband bought an enormous Mortgage Lifter at the farmer's market and I'm not entirely sure how to best serve it. It's a little over a pound and a half and it's ready to eat tonight. We already ate a smaller one on sandwiches and it was amazing, so don't want to cook the larger one either. Suggestions?
If it's that good of a tomato, just use it in a tomato sandwich with mayo or Miracle Whip and maybe some lettuce. Forget the bacon so it doesn't detract from the tomato. Or make tuna salad and serve that with the tomato, sliced.
